Vegan Gluten-Free Banana Bread Muffins
Mix used: King Arthur Flour gluten-free muffin mix
Ingredients:
- King Arthur Gluten-Free Muffin Mix
- 4 ripe bananas, mashed
- 1/3 cup oil or of choice (I used canola. Melt vegan butter first if using.)
- 2 Tbs. ground flax seed
- 6 tsp. water
- 3/4 cup of non-dairy milk (I used unsweetened almond milk)
Directions:
1) Preheat oven to 350°F
2) Beat together water and flax seed in a small bowl or cup
3) Combine all ingredients
4) Bake in muffin tins for 20 - 25 minutes
Enjoy! Makes 18 muffins
